Did more of that today than we usually do! And it's delicious! And there's leftovers! I feel good about this.
Made steamed rice with boiled fine-chopped cauliflower mixed in as a base, for higher fiber and lower calorie density and possibly more nice phytochemicals. Steamed some eggs on top of that, which are mostly for later (had one just to make sure they were okay). Fried some chopped collard greens, and then also some catfish fillets with lemon pepper and cayenne and garlic. Made a bowl of base + greens + fish, some wasabi mayo as an accent. It is so tasty.
Chopping the cauliflower was awkward because of how much little pieces of it just wanted to go everywhere. It was also nearly dead; I removed some bits that were starting to get moldy. There's still one medium-sized head left in the fridge; I might boil that tomorrow or I might just throw it away, not sure.
Now to put the rest in the fridge for another day!
